What to Expect

The crab omelette is the dish that earned Jay Fai her star: a golden egg parcel stuffed with generous chunks of fresh blue crab meat, fried until the outside is crisp and the interior stays tender and moist. Her drunken noodles, known as pad kee mao talay, feature flat rice noodles stir-fried with whole prawns, squid, cuttlefish, fresh chili, and holy basil, finished with a deep smoky char from the charcoal wok. The tom yum goong arrives as a clear, intensely aromatic broth loaded with shelled jumbo prawns, fish, squid, and mushrooms. A dry tom yum variation stir-fries the same seafood in concentrated tom yum seasoning, delivering sour-spicy punch without the soup. For a lighter option, the yellow curry crab balances turmeric-rich curry paste with sweet crab meat and crisp vegetables.
