The Pan-Seared Foie Gras arrives with a seasonal fruit reduction that balances richness with acidity, a consistent opener on the tasting menu. Chef Rodriguez's Grilled Wagyu Ribeye gets a Mediterranean treatment with herb crust and roasted root vegetables, cooked over high heat to lock in flavor. The Mediterranean Sea Bass is prepared whole, deboned tableside, and finished with lemon, capers, and olive oil. For the March 2026 tasting menu, the kitchen added Taraba King Crab and Iwate A5 Beef courses.
