Half of this short list is Japanese. Ekkamai and Phra Khanong, Bangkok carry six restaurants on Weavify and three of them cook Japanese food in three different formats: Teppen Ekkamai, the original of its chain since June 2013, doing straw-grilled warayaki with an energetic service style; Yurijin, a two-level izakaya next to BTS Ekkamai with a shokudo lunch of one main and more than twenty unlimited sides; and Niku Niku, an Osaka-style yakiniku room grilling certified A5 wagyu over charcoal.
The Thai kitchens either side of them are both old. Wattana Panich has kept the same beef broth simmering since 1974 and is now run by the third generation of the family; it is also the earliest to close on this page, shutting at seven in the evening. Phed Phed started in Phahon Yothin Soi 8 in 2017 and has grown to six Bangkok locations, cooking som tam, tom yum goong and spicy basil pork.
Heng Hoi Tod is the specialist. It is the Bangkok outpost of a hoi tod business founded in 1973, cooking crispy oyster and mussel omelettes in an enormous iron pan with a triangular spatula, and it is the only kitchen here that runs past midnight, to one in the morning.
